Low-Cost Healthy Breakfast Recipes

All recipes can be created to be vegan, but featured here are my usual go-to ingredient combinations.
- Whole grain bread
- Two Eggs
- 1/2 cup Milk
- 1 tsp Vanilla
- 1 tsp of cinnamon, nutmeg, allspice
- 1 tbsp Coconut oil
Beat two eggs in a relatively flat dish until fluffy. Add 1/2 cup milk (even more if you like a lighter flavor), one teaspoon of vanilla, and a teaspoon of delicious spices and beat again. Soak the bread while you heat up a pan with a tablespoon of coconut oil on your stovetop. When bread is properly soggy, fry in pan and leave another slice to soak.
Top with accompaniments of your choice. I recommend maple syrup and fruit combinations, or even lemon curd.
Banana Oatmeal Pancakes
This recipe serves one weightlifter or two people who are only a little hungry. While these pancakes are filling, they're also lightweight and don't have a lot of calories unless you pile the peanut butter on. It's a low cost healthy breakfast recipe that can be made in a cinch.
Makes two small servings
- 1 large banana
- 2 eggs
- 1/2 cup oatmeal
- 1 tsp vanilla
- 2 tbsp natural peanut butter
- Drizzle of Maple syrup
In a blender, pulse 1/2 cup of oatmeal until it turns into a flour. This ensures that the pancakes are fluffy, rather than lumpy. Add one large banana, two eggs, and a teaspoon of vanilla. Start a pan with coconut oil. When it's hot fry to desired doneness.
Combine peanut butter and maple syrup in a bowl until it's pourable. Top your amazing pancakes with this and you will be in heaven.
Eggs & Toast & Their Bestie
The bestie is avocado, of course. While we can all make eggs and toast, you can elevate this low cost healthy breakfast to new heights if you butter your toast with avocado, sprinkle it with cayenne, and place your freshly fried egg right on top. Voila!
- 1 piece of whole grain toast
- 1/2 an avocado, mashed
- 1 fried or poached egg
- Sprinkle of cayenne pepper
Oatmeal has a reputation for being boring. It's comforting and filling, but it doesn't taste like much. However, because of its underwhelming flavor, it can be topped with almost ANYTHING to become an exciting, low cost healthy breakfast meal.
Bananas and apples are fruits that go particularly well with oatmeal. I enjoy it with all types of fruits, and I love to alternate them so that it becomes a different meal every morning. Below is my list of recommended toppings:
- Maple syrup
- Chia seeds
- Apple (dry or fresh)
- Cinnamon or pumpkin spice
- Peanut or other nut butter
- Almond flavor
These are all so simple and I find them so delicious. Sometimes I just need to remind myself that even if I'm on a budget, I don't have to eat boring.
