No-Bake Autumn Granola Bars

Making your own granola bars is a good idea. With the right amount of spices, your house will smell like autumn in an instant. But there's a catch to baking — it often requires time (and a lot of it). These no-bake autumn granola bars are here to the rescue. They will put you in a seasonal mood and they're perfect snacks that you can enjoy at home or at school with your friends. I've included the ingredients for the base of this recipe below. The add-ins are all optional. I encourage you to experiment with them and add different combinations of your favorite seeds and nuts into the no-bake autumn granola bars.

No-Bake Autumn Granola Bars

Ingredients for the base

  • 4 tbsp. coconut or 5 of olive oil
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1/2 tbsp. peanut butter
  • 1/2 tsp. vanilla extract
  • 2 cups quick oats


  • 1 handful of peanuts
  • 1 handful of almonds
  • A few tbsp goji berries
  • 1 tbsp pumpkin purée
  • Dark chocolate chips (can use raw dark chocolate)

Take a sauce pan and add the coconut/olive oil, brown sugar, honey and peanut butter and cook on medium heat until it's all combined and thickened. Turn off the heat. Stir in the vanilla, the quick oats and the rest of the add-ins. Mix until combined (also add the puree if you choose to use it). Take a plate or a wide container to put in the mixture, put some parchment paper and then pour it in. Let it cool a bit then place the chocolate chips on top and put it in the freezer for about 30 minutes. Cut into bars and enjoy! Make sure that you follow me on my blog too :
