The vegan pesto zoodles are equally as delicious. It's a savory recipe that is abundant with nutrients. The dressing can be made in a flash if you have a nutribullet - just blend and go!
Papaya Fruit Salad
- 2 cups of chopped papaya
- 1 cup of grapes
- 1 banana, sliced into medallions
Chop papaya lengthwise and score and scoop into a bowl. Mix with washed grapes and banana. Store in an air-tight container and take it with you if you're on the go.
Vegan Pesto Zoodles
- 1-2 zucchinis
- 2 chopped roma tomatoes
- 1/2 red pepper, sliced lengthwise
- 6 leaves of basil
- 1 handful of spinach, washed
- 1/4 cup mango
- 1/4 cup avocado
- 1-2 cloves garlic
Wash and spiralize zucchini. Set aside in large bowl. Chop all ingredients for pesto and blend in a Nutribullet or a food processor. Slice tomatoes into quarters and toss into zucchini noodles with the pesto mixture.
