For some reason, I think that 'The Lonely Lentil' will make a great title and storyline for a children’s book. When I was younger, I would pick out a cookbook with pictures, mostly involving something with chocolate, and would sit in bed and read it before falling asleep. I was a normal kid, reading a book before bed… Anyway, not many people cook with lentils, mostly because they don’t know how, or find that they taste gross. I was the same. My Nonna makes this delicious lentil soup, called Fakes (pronounced fa-key), which was the only real lentil dish that I would eat when I was younger. My mom tries and tries to make lentil based dishes, but only a handful have become popular in our house.
Not too long ago, I discovered this salad from the Salad Samurai cookbook, and I’ve been hooked. I make it twice a week, and it’s packed with healthy fats and protein, as well as spice and flavour. I thought I would share it with you, since you know, I’m just that nice and all. I call this the Lazy Student’s Lonely Lentil Salad.
Lonely Lentil Salad Ingredients
- 1 can of red lentils, rinsed and drained
- 2 green onions, finely sliced
- 3 to 4 big leaves of kale, washed and ripped to bite size pieces
- 1 tomato, finely chopped
- 1/3 of a red onion, finely diced (OPTIONAL)
- ¾ cup of light coconut milk
- 1 lime
- Red Wine Vinegar
- Pinch of sea salt and black pepper
To start, rip up your kale and chop up your onions. Place them in a large bowl, pour the coconut milk and lime juice over, and massage the kale for a couple of minutes.
While you’re giving your kale a massage, heat up a frying pan on high heat. Leaving the excess coconut milk in the bowl, plop your kale into the pan and fry it until it starts to char. Just make sure it doesn’t burn! The same thing goes for the green onions.
When that is done, pour in your red wine vinegar and Sriracha in the bowl with the remaining coconut milk, and whisk it up. Add in your rinsed lentils, chopped tomatoes and onion, and the kale and green onions. Toss the whole thing and sprinkle some salt and pepper.
