If you're swearing off chips and cookies at the start of the new year, these healthy and vegan snacks will keep you satisfied and on the right track. All three recipes can be made in a cinch. They use a handful of natural ingredients, they're preservative-free, and they're perfect for sharing. Watch the video above to learn more about how PumpUp member @rawincollege prepared her raw guacamole, caramel apple slices, and vegan banana bars.

Raw Guacamole

  • 1 ripe avocado
  • 1/2 a lime, juiced
  •  1/4 of a large lemon, juiced
  • 1 handful cilantro
  • 1/4 cup diced tomatoes
  • 2 tbsp onion

Mash the avocado with the lemon and lime juice, then fold in chopped ingredients.

Caramel Apple Slices

  • 1 cup pitted dates
  • A few tsp water
  • 1 apple, sliced horizontally into thin discs
  • Cinnamon, to taste

Place dates and a few teaspoons of cold water in a food processor until the mixture forms a thin and spreadable paste. Add each teaspoon of water to the mixture gradually, so that the caramel spread isn't too runny. Spread the mixture on top of the apple slices and sprinkle with cinnamon, to taste.

Banana Bars

  • 1 cup of dried mulberries
  • 8 pitted dates
  • 2.5 cups dried figs
  • 2 tbsp carob powder

In a food processor, blend all ingredients together. This does take some work, but if you’re patient and add a tiny bit of water at a time, everything will combine evenly. Once blended, press down the mixture in an aluminum foil-lined pan until it's about 1-2cm thick. Place in freezer for 45 minutes. Remove from freezer and slice into bars, ten top with thin slices of banana. Store in fridge and enjoy!
