There isn't a problem that chia seeds can't fix. They're incredibly versatile and packed with protein and fibre - you'll be full for hours on hours. If you're a fan of chocolate chia pudding, try layering it up with some banana ice cream. It's the 'parfait' parfait you never knew you needed. Feel free to make the chocolate chia pudding ahead of time and store it in your fridge overnight. When you're ready to eat it, blend up some nice cream, add some berries into the mix, and you'll be good to go.

Chocolate Chia Pudding with Berry Nice Cream

For the Chocolate Chia Pudding

  • 3 tbsp chia seeds
  • 1/3 cups of the milk of your choice
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

For the Berry Nice Cream

  • 1 frozen banana
  • 1/2 cups frozen berries
  • 1/4 cups yogurt
  • 1 tbsp maple syrup

Mix all ingredients for the chocolate chia pudding and leave it in your refrigerator overnight. Store in a mason jar or a lidded container to preserve freshness.

To make the berry nice cream, blend the banana, berries, yogurt, and maple syrup together until smooth. Add berries over your chia pudding, then layer the nice cream on top. Serve with more berries and the toppings of your choice.
