This is the perfect holiday kale salad to make especially during December. It's delicious and easy!  Whether you're going to potlucks, or want to eat something a little festive this winter, this holiday kale salad fits the bill. The avocado in the dressing of this salad will soften up the kale and it imparts a creamy and delicious texture. When combined, the basil, tomatoes, avocado, and lemon make a creamy dressing that really compliments the kale and the rest of the salad ingredients. 

Holiday Kale Salad

  • Heaping handful of kale
  • Chopped honey crisp apples
  • Chopped red cabbage
  • A handful of cherry tomatoes
  • Thinly sliced cucumbers
  • Raw pecans


  • 1 whole ripe avocado
  • 1/2 a fresh lemon
  • 2/3 a peeled zucchini
  • 1/2 a cup of fresh basil leaves
  • A handful of cherry tomatoes

Chop your kale finely so that it's easy to chew. For the dressing blend together avocado, lemon, zucchini, basil, and cherry tomatoes.

Wash your hands thoroughly to mix in the dressing properly. I added in some chopped honey crisp apple, some red cabbage, cherry tomatoes, thinly sliced cucumbers, and I mixed it all together. I topped it off with raw pecans for some extra added crunch.
