Papaya Fruit Salad

  • 2 cups of chopped papaya
  • 1 cup of grapes
  • 1 banana, sliced into medallions

Chop papaya lengthwise and score and scoop into a bowl. Mix with washed grapes and banana. Store in an air-tight container and take it with you if you're on the go.

Vegan Pesto Zoodles

Zoodle Ingredients

  • 1-2 zucchinis
  • 2 chopped roma tomatoes

Pesto Ingredients

  • 1/2 red pepper, sliced lengthwise
  • 6 leaves of basil
  • 1 handful of spinach, washed
  • 1/4 cup mango
  • 1/4 cup avocado
  • 1-2 cloves garlic

Wash and spiralize zucchini.  Set aside in large bowl.  Chop all ingredients for pesto and blend in a Nutribullet or a food processor. Slice tomatoes into quarters and toss into zucchini noodles with the pesto mixture.
