3 Smoothie Recipes for Spring | Get Healthy With Valentina

We know that fruits and vegetables contain important vitamins and minerals, yet we don't seem to eat enough of them. Celebrate these food groups now that spring is here. Craving a cold snack? I have your back! Here's my little take on the not-so-healthy (but always tempting) ice cream sandwich. This has no added sugar, it's vegan, and I promise that it's just as satisfying and delicious as the real thing (if not better!).

Bananas are our main ingredient. I also incorporated a few fitness community favorites: peanut butter, oats, coconut oil and cacao powder. We're making the cookie layer base, the ice cream and a chocolate sauce to top it all off.

Oatmeal Cookie

  • 1 cup oats
  • 1 ripe banana
  • 1 tablespoon peanut butter

Simply mash the banana and mix with the oats and the peanut butter until they're well combined. You can shape them into cookies, although I recommend using some kind of mold or tin for brownies or cupcakes. We'll be using the same tin for the banana ice cream too, so that the cookies and the ice cream have the same shape. Place the cookies in the oven and bake at 350F for 10-15 minutes. Leave to cool on a wired rack. Try not to eat any!

Strawberry Nice-cream

  • 1 frozen banana
  • 5-6 frozen or fresh strawberries

Mix both ingredients in a food processor or high speed blender until it has a creamy consistency. Pour the mixture into the same tin that you used to shape your cookies. Place in the freezer until the ice cream hardens. Once the ice cream bars are set, take the tin out and top the bars with cacao syrup:

Cacao Syrup

  • 1/2 tablespoon coconut oil, melted
  • 1/2 tablespoon cacao powder

Mix both together with a spoon until well combined. Drizzle the cacao syrup on top of the strawberry nice-cream bars and return to freezer for a couple minutes, until the syrup has set. Carefully take the bars out of the tin by dipping a sharp knife in hot water, then slice the strawberry nice-cream bars into squares.

Time to put your strawberry nice-cream sandwich bars together! Grab a cookie and place a square-shaped piece of nice-cream on top. Eat it as is, or place another cookie on top to make it look like a real ice cream sandwich. There you have it: simple, vegan, and refined-sugar free strawberry nice-cream sandwich bars. Perfect to have as snack or dessert (or just for whenever you feel like it, let's be honest here). Enjoy!

There's something about summer that makes life sweeter than it already is. You've earned ample time to relax in shorts, warm up at bonfires, camp under the stars, and make the most out of long summer days. Take this month as a time to reflect. Always take personal responsibility for your life and your happiness, but also care for the health of the relationships in your life. Remind other people that you love them, and make it a habit. Spending your summer in isolation by the pool certainly sounds like a great idea, but creating memories with those around you will make your summer 10 times better. Forgive. If you truly care for someone, allow them to be human. We all make mistakes and expect forgiveness. It comes to us a lot faster when we offer it genuinely. And don’t forget to enjoy and share food memories because eating healthy food with someone never fails. Here are some healthy summer snacks that you can share with your loved ones this summer.

Chia Rhubarb Muffins

Chia Rhubarb Muffins // 4 healthy summer snacks that are perfect for sharing from the PumpUp Blog

Ingredients

  • 1 ½ cups spelt flour • ½ cup rolled oats • 1 1/2 tsp. baking powder • 1/2 tsp. baking soda • 1/2 tsp. salt • 3 Tbsp. chia seeds + ¼ cup water • ¼ cup maple syrup • 2 tbsp. extra virgin olive oil • 1/2 cup orange juice • 1 tsp. vanilla extract • 1 1/4 cup finely chopped rhubarb • 1/3 cup chopped dried apricots (or raisins, dates, cranberries, cherries, etc.)

Directions

Combine chia seeds and water in a glass and set aside for at least 15 minutes. Preheat the oven to 350 F. Line a muffin pan with liners. In a large mixing bowl, stir together the flours, baking powder, baking soda and salt until combined.  In another bowl, add the chia seed gel, olive oil, maple syrup, orange juice and vanilla extract. Whisk until smooth by hand. Add to the flour mixture and blend just until moistened but lumpy. Stir in the rhubarb and apricots. Spoon the batter into 12 muffin cups, filling each cup about 2/3 full. Sprinkle the topping of your choice onto each muffin and bake until springy to the touch, about 25 to 30 minutes. Let cool for 5 minutes, then transfer the muffins to a wire rack to cool completely

Vegan red pepper cashew dip

Ingredients

  • 1/2 cup cashews (soaked for a few hours if you don't have a high speed blender)
  • 1/2 tablespoon white miso
  • 1 tablespoon nutritional yeast
  • 2 teaspoons Bragg's Liquid Aminos (Or other raw soy sauce)
  • 1/4-1/2 cup water
  • salt and pepper
  • 1/2 red pepper (use the rest for dipping!)

Directions

Combine the ingredients together in a blender and pulse until creamy. Add more water for a thinner consistency.

Frozen yogurt bites

Ingredients

  • 1 cup yogurt
  • 1/4 cup fresh strawberries, sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 1/2 cup fresh mango, diced

Directions

On a baking sheet, lay out 12 silicon muffin cups. Dollop some yogurt into each cup, until all the yogurt is gone.Place a few pieces fruit into each cup, pressing them down into the yogurt with the tip of your finger. Place the cups into the freezer, and freeze overnight, or until the yogurt is set.Once frozen, remove from the cases and serve, or place in an air-tight plastic bag and store in the freezer for up to 2 weeks.

Oatmeal Raisin Cookies

Ingredients

  • 100g instant oats
  • 90g whole wheat flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp  ground cinnamon
  • 1/8 tsp salt
  • 2 tbsp coconut oil, melted
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ c agave
  • ¼ c raisins

Directions

Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil or butter, egg, and vanilla. Stir in the agave. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill for 30 minutes.

Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.

You're cool. Stay that way with refreshing and healthy ice pops! They're simple to make and perfect on a hot summer's day. Sliced up fruits make perfect frozen treats when they're blended with water or coconut water. If you prefer creamier textures, create your ice pops with greek yogurt or coconut milk.

Peach perfect healthy ice pops

  • ½ cup of water
  • 2 peaches
  • Ice pop molds

Creamy strawberry healthy ice pops

  • Coconut milk
  • 5 strawberries
  • Ice pop molds

Directions:

Blend all the ingredients but leave out some pieces of fruit. Put all the mixture into ice pop moulds or small yogurt cups. Carefully press a stick into the ice pop mold and freeze for at least 3 hours. Run hot water over the mixture to release the ice pop from the mold.

Lunge now, lunch later. Start off your day with a set (or two, or three) of lunges! Perform them with weights for an extra challenge. The weeks are flying by and summer is just around the corner. We all associate summer with the beach, summer clothes, no school, road trips, etc. For many years I used to feel a sense of dread, as I was overweight and felt so down about the prospect of baring so much skin in the summer sun. It affected my confidence and I felt so angry for letting myself get this way. I would browse through fashion websites and would look at all the beautiful clothes that I couldn’t buy. I would feel jealous of the models in the pictures. I was getting frustrated thinking about how I had let myself go. I had lost all interest in my appearance and didn’t even care whether I brushed my hair or not. On top of all of this, I wore extremely baggy clothes that would make me look even heavier than I was. I lost interest in life. DEBBIES CERT In 2014, I decided to do something about it by eating healthy and working out. It's been a year since I began my journey and I recently received my certificate for Gym and Fitness instruction. I'm also getting married next year to my best friend Darren and have never been happier. All of this happened because I changed the way I thought about food. Now, I eat to fuel my body instead of eating everything in sight. I work out 6 days a week and have one day off for rest. Life has become easier, and I am much more organized and calmer because of working out. I can concentrate better and can deal with every situation that comes my way.

When I was mistreating my body, the smallest of things would tip me over the edge. I was extremely irritable and was a nightmare to be around. Ultimately, I became so disorganized with how I handled my life and negligent of my friends and family. I just wanted to be left alone.

WATER I cannot even begin to describe the benefits of transitioning to a healthy lifestyle and working out. It changed my life so thoroughly: I am a completely different person on the inside as well as the outside. If you really want to change and get healthy, you can. I don’t believe in ‘diets’ as they are only a short term solution. Once you start to eat normal food again, you will pile the weight on. I have attempted so many diets and they do not work: they make you feel deprived and hungry. A lifestyle change is for life. I have never felt deprived or hungry at all since I resolved to maintain to a healthy lifestyle in 2014. I lost 3 stone (42 lbs) in 10 months and so can you!

  • Clear your home of all rubbish food: white bread, white rice, processed foods.
  • Go shopping and only buy food that you like and will nourish you
  • Have one treat day in the week, but make sure to go straight back to healthy eating and working out the following day.
  • If there is a special occasion coming up, enjoy it, but don’t go to mad that you will feel mad at yourself the following day.
  • If you feel unmotivated to work out when you come home from school/work /college turn on your favourite music and it will motivate you to workout (I swear by this one).
  • Drink hot water and lemon every morning before breakfast; it is amazing for your skin and helping promote weight loss.
  • When you are eating your dinner, turn off the TV because it can distract you and you won’t know if you are full or not.

Adjusting to daylight savings time isn't for everybody...but it is for me. Why? Because it means SPRING is coming and SUMMER is only 12 weeks away!!!!!! I look forward to so many things: hearing birds chirping, shopping for skirts and shorts (...and swimsuits), eating and drinking with friends on an outdoor terrace, morning runs, etc.! BUT before I get all crazy excited, I still need to work on hitting my fitness goal before summer! I need a plan and I want you to join me. My doctor put me on rest for the past few weeks because of an old knee injury. It was the worst. If you know me, you know I love to exercise on a daily basis. It’s what I live by! Not being able to exercise was the worst punishment I could have possibly imagined. I don’t give place to negativity in my life so I figured that while I can't work on my body, I can sure work on developing myself.  I worked even harder on personal development and studied for hours on end. When the moment came for me to finally exercise again, I felt amazing.

I have always been an optimist: a person who doesn’t give up on herself nor on other people. There may be a mere 12 weeks until summer but you still have time to achieve your health and fitness goals. It takes 21 days to create an habit, 8 weeks for you to see that change and 12 weeks for people to see your results. By making the commitment to start now, you can really make progress by the time you hit June! What are you waiting for? It’s go time!

Pumpin' Up Outdoors!

It’s beautiful outside and you know it’s the perfect day to work out… but you don’t want to miss out on the weather by being inside the gym. With just a pair of running shoes, a bottle of water, and PumpUp in your pocket, you can enjoy the weather and still get in a great workout! When the weather is beautiful, there’s no better way to spice up your workout then by taking it outside!

Since you can choose the equipment you have available, with PumpUp, creating a quality workout you can do outside is just a few taps away! Here are three great ways to get in some exercise outdoors:

1) Au natural.
