This is the perfect holiday kale salad to make especially during December. It's delicious and easy!  Whether you're going to potlucks, or want to eat something a little festive this winter, this holiday kale salad fits the bill. The avocado in the dressing of this salad will soften up the kale and it imparts a creamy and delicious texture. When combined, the basil, tomatoes, avocado, and lemon make a creamy dressing that really compliments the kale and the rest of the salad ingredients.

A healthy vegan burrito is the perfect way to eat your vegetables! It's both fun and satisfying, too. Just take two big leaves of collard greens. This vegetable tastes a bit like spinach and romaine mixed together. What I love about collard greens is that they have a lot of surface area - this is perfect for wrapping veggies. In this recipe, the cherry tomatoes add just the right amount of sweetness to complement the other ingredients. Cutting the veggies finely makes it delicious and easy to wrap. I also added some cilantro and arugula - these are optional, but I like the flavors that each of these herbs bring to the vegan burrito. They add just the right kick!

I've received tons of requests asking about what kinds of groceries I buy throughout the week and how much I spend on them. This video will give you a brief overview of my vegan grocery haul. My favorite place to get groceries is the farmer's market. Everything tastes better, it's local, and it's generally cheaper. When I can't get things from the farmer's market, I buy my groceries from Costco because they offer great deals and many options. I buy different groceries depending on what I need, what I'm in the mood for, or what's available at the time. Frozen and dried fruit usually last 3-4 weeks and the fresh produce will last about 1 week and a half. The produce in this video amounts to $96.00 and throughout the week, I'll pick up an additional $30 dollars worth of food. This consists of frozen bananas, cauliflower, zucchini, herbs, and extra produce.

Banana Berry Smoothie Bowl

Ingredients

  • Frozen berries
  • Frozen bananas
  • Ripe bananas
  • Dragon fruit
  • Kiwi

Blend frozen berries and bananas together until smooth. This will be your base. Layer on the toppings of your choice. This recipe uses sliced ripe bananas, dragon fruit, and kiwi.

Sushi Salad

Ingredients

  • Cauliflower
  • Shredded carrots
  • Avocado
  • Red cabbage
  • Bell peppers
  • Cucumber
  • Kale sprouts

Roughly chop cauliflower and pulse it in a food processor to make cauliflower rice. Julienne or shred carrots and slice red cabbage bell peppers, and cucumber. Halve and scoop out an avocado and either dice it or leave it intact. Top sushi rice with kale sprouts.

"I've never been this fit and I don't plan on slowing down," said Ashley (actually_oh), who shared about her stunning transformation with the PumpUp community. "A few years ago I was over 150-160 pounds and I have NEVER been anything less than overweight my whole life. I'm happy I've come this far, I never thought I would look like this!" Ashley adopted a healthier lifestyle and regular, consistent workout routine since she began her journey with the PumpUp community. She began her journey at 155 lbs and lost more than 20 lbs thus far. Every day is a chance for progress— not only on Transformation Tuesday. "My PumpUp fam just inspires me so much to keep on going. Never forget why you began."
