Almost two years ago, I decided to become a vegetarian (lacto-ovo to be exact.) This decision was a long time coming for me… I had wanted to officially call myself a vegetarian for many years preceeding this diet change in the beginning of 2013. Since I was still growing and my parents did not know much about the vegetarian lifestyle, they thought it was best for me to wait until I was truly “done” growing so I could have what they considered to be “proper nutrition” (consisting of various animal products such as chicken breast, fish, seafood, and rarely red meat.)

After lots of research and watching various documentaries, I was done growing and ready to become a vegetarian—for health, ethical, and personal reasons. If you want to change anything in your life, you need to have support along the way. Once I decided to make this lifestyle change, my family and friends were extremely encouraging and that made the transition even more exciting for me. I was looking forward to beginning a new journey of achieving my optimum health and becoming my best ‘self.’

Now fast forward to about 6 months ago when I came upon the raw foods lifestyle.  I have always been extremely interested in nutrition, so I would naturally research the newest “fad diets” and I always wanted to be up to date with the health and wellness world. Given the endless resources on the internet, there is almost too much information for an individual to process if they are looking for a easy solution to get healthy. I do not believe in restriction, counting calories, or living to eat…

Food should be a source of nutrition, happiness, and it should create a healthy relationship within yourself and the people around you.

So there I was, searching the internet, when I found FullyRaw Kristina—an incredibly inspiring young woman who adopted the raw foods lifestyle 8 years ago. I have never felt more connected to my body and what I put in it than I do now…This raw vegan lifestyle has affected me in all aspects of my life. Not only has my perspective changed on how to nourish myself, but it has influenced the people around me and the relationships I share with them in ways I could have never imagined. That's how I became a raw vegan.

The power of food and the power of raw veganism is truly incredible.

Why am I here?…Well, I am here because I cannot keep this lifestyle to myself. It has affected me so positively that it would be a crime not to put it out there and continue to share it with the world. I know that I am not going to convert everyone into a raw vegan, but I want to share my experiences and my lifestyle with you—even if it means you just have one extra banana every day—it makes a difference.

Whether you’re a college student, have a full time job, or a house full of children, eating healthy on the go can often come as a challenge. The notion of “fast food” has been completely misconstrued by society over time. The simplest, fastest food, is straight from the Earth. Yes—fruits, veggies, nuts and seeds are “fast foods” and won’t leave you feeling sluggish when you’re on the move. From travelling through an airport to taking a road trip, it may seem like unhealthy food is your only option! I promise, healthy food is all around you if you’re looking for it! Here are some of my top tips on how to stay healthy while travelling, even with dietary restrictions!

“IF YOU FAIL TO PLAN, YOU PLAN TO FAIL…”





BE PREPARED— BRING SNACKS! This is my #1 tip to help you stay healthy while travelling! Packing snacks for yourself ensures that you will be much less likely to give into those unhealthy temptations. Not to mention, it will save you from spending money on overpriced airport and rest stop food. Cut up some veggies and fruit, put them in some plastic tupperware, take a few handfuls of nuts in a ziploc, and you’re good to go!! ALWAYS hydrate while you are travelling—you will not only be pushing toxins out of your body, but you will also keep your immune system strong while you are surrounded by new environments and people.

EAT A BIG MEAL BEFORE YOU GO!

If you know that you are going to be traveling for a long period of time without many breaks for eating, eat a big meal before you take off or before you begin the drive to your destination. Starting your travels with a big bowl of fruit or a large green smoothie will keep you energized and fuelled until your next stop.

DO SOME RESEARCH!

This tip has not only tremendously helped me while travelling, but it has also helped me through my raw vegan journey in general. Planning ahead will allow you to scope out restaurants and markets at your destination that have healthy options for you and will keep you on track! Whether your trip is for leisure or business, there is no reason that food should cause you any stress. Exploring a new city or town can be an exciting way for you to try new things and take in the unique options your destination has to offer.

TAKE CARE OF YOUR BODY!

Just because you are traveling does not mean you should neglect your body! Although you may have a fully packed itinerary, always make sure you are allowing yourself enough time to rest and rejuvenate so you can enjoy your trip to the fullest. Sneak in some exercise by taking the stairs, skipping the escalator/elevator if you can—I am not saying that you need to go to the gym every day of your vacation! Your time off should be spent in the most enjoyable way you see fit without returning home in a slump over bad food choices.

BE FLEXIBLE! Let’s face it, things don’t always go perfectly when we’re travelling. From delayed or canceled flights to mixups at the hotel to bad restaurant choices, travel can sometimes be challenging. Rather than struggling against things that you cannot control, you can use these unpredicted events as opportunities to sit back and catch up on things you’ve been avoiding—like taking time to think about how you will better yourself!

I know that changing your lifestyle is not an easy feat! So today, I want to address some challenges that you may face or expect as a raw vegan and provide solutions to those problems!1. Being scared of change! Everyone goes through different things when they start eating healthier– fear of gaining weight, breaking out, not being able to ‘stay on track’.  Some people like to change their diet overnight (like me) and some people like to take baby steps (most people). I think it is so important to find what method works best for you. Transitioning into a raw vegan diet can be easy if you slowly omit processed foods and add in more fruits and veggies on a daily basis!

2. Feeling too hungry or too full! You have to LISTEN to your own body. Eat until you are SATISFIED! These foods are high in water content and nutrient dense. Your body has to adjust to eating a larger quantity because most fruits and veggies are low in calories! In order to thrive on this lifestyle, you need to EAT ENOUGH! When you eat enough, you will make those cravings for processed foods go away.

3. Detox symptoms! You have to think about how long you have been eating food that upsets your body– I had 18 years of processed food in my body. My detox symptoms were relatively mild and lasted only about 2 weeks–I was also coming from a vegetarian, highly plant based diet so I was not completely overhauling my diet. Detox symptoms can range from slight headaches to breakouts in your skin, but this is your body’s way of getting rid of all of those built up toxins! It’s OKAY and the symptoms will subside! :)

4. Feeling isolated! As long as you believe in what you are doing, you shouldn’t base your decisions off of what other people think or what other people are telling you to do. It’s easier than you think! Embrace other lifestyles just as you hope they embrace yours :)

5. Feeling short on time! If you fail to plan, you plan to fail! When you are eating raw, you need to surround yourself with an abundance of food so you are always feeling satisfied. A lot of people ask me, especially as a college student, how do you have time to prepare your food? It’s truly so simple for me–think about it, blending up a smoothie and rinsing out the blender takes WAY less time then cooking up a pot of food! The raw lifestyle is convenient even if you are on the go! You just have to plan AHEAD.

One of my favorite ways to stay energized throughout the day is to always have healthy snacks with me. It is SO important to plan ahead! If you know you are going to be running around all day, whether you are at work or going class to class, you should make sure you have healthy options with you so you don’t reach for that bag of chips or candy bar! The perfect snacks are whole fruits and veggies that will keep you CARBED UP! Here are some of my favorite healthy snacks to munch on throughout the day!

BANANAS are my #1 go-to snack. They are super easy to throw in your bag and eat throughout the day! Make sure your bananas are ripe like these so you get all of the nutritional benefits and so they digest properly!

DATES are like little packs of energy! If you don't have a lot of time on your hands, dates are a great option to get in lots of energy with this nutrient and calorie dense snack!

NO excuses! APPLES have to be the easiest, most accessible fruit to pack for your busy day. I like to eat two or three apples every day!--Not only are they delicious, but they are also a great boost of natural caffeine!

Ah, romance. Just what everyone needs…right? February is undeniably a month of love: a month when we’re encouraged to express it to others by giving gifts such as candy and flowers. If you’re loath to the idea of February in general (it’s cold, it’s slushy, it’s wet, it’s not quite spring yet, and maybe you feel a bit lonely), I feel you.  But this month has plenty other good qualities that are worth highlighting. Love should also flow inwards, not just outwards. 

The purpose of life is to live, so start living, and start falling in love with you. You are the only person you know you can receive love from, whenever you need it. You are the only person who can give yourself permission to see the beauty of the world. Stop worrying about other people’s opinions. All what really matters is how you feel. Give yourself a chance to learn more about yourself and love yourself no matter what. You are the only person who decides how to nourish your body. The best part about choosing wholesome food is that you know that you’re eating something good for your health, and that by default means that you’re doing something great for yourself.  

So having all that said… Here are some recipe ideas so you can try to find Self-Love through Food! Don’t forget to give you the opportunity to fall in love with your soul and your body!

Quinoa Egg Muffins

Ingredients

  • 3 eggs, large
  • 1 + 1/2 cup egg whites
  • 3 tbsp. ground flax seeds or chia seeds
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp. onion (garlic) powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • 1 cup quinoa, cooked
  • 2 handfuls spinach, coarsely chopped
  • 1/2 cup red bell pepper

Directions

Preheat oven to 350 degrees F, place cupcake liners into a 12 muffin tin and spray generously with cooking spray.  In a large mixing bowl, whisk eggs and egg whites for 30 seconds. Add flax/chia seeds, feta cheese, onion (garlic) powder, salt, pepper and whisk to combine. Add quinoa, spinach, bell pepper and mix. Fill each muffin with egg mixture 3/4 full. Bake for 20 minutes, remove from the oven and let cool for about 10 minutes. Using a rubber spatula, loosen the egg muffins from the muffin tin and slide onto a platter. Serve hot and enjoy!

Quinoa Cacao Truffles

Ingredients

  • ¼ cup melted coconut oil
  • 2 tbsp cacao powder
  • 2 tbsp coconut flakes
  • 1 ½ cup puffed quinoa

Directions

Mix all of the ingredients (except the puffed quinoa) in a big bowl until well-combined. Mix in the puffed quinoa. Spoon into small muffin lines. Refrigerate until set.

Raw strawberry pie

Ingredients

Crust

  • 1 cup raw pecans
  • 3/4 cup raw walnuts
  • 1 cup (packed) pitted dates
  • ¼ tsp (scant) sea salt
  • 1/4 tsp cinnamon

Filling

  • 3 cups fresh strawberries (measured whole if small, or cut in half if large; these are for filling, you will need extra for garnishing if desired)
  • 3/4 cup raw cashews
  • 3-4 tbsp raw agave
  • 1 tsp freshly squeezed lemon juice
  • Couple pinches sea salt
  • 1 tsp lemon zest (stir in after pureeing)

Directions

Lightly oil a pie plate with coconut oil. Prepare the crust: Place all the crust ingredients in a food processor and pulse briefly until crumbly and the mixture will hold together when pressed with your fingers. Transfer the mixture to the prepared pie plate, pressing it evenly into the pan.  Prepare the filling: Place all the filling ingredients, except the lemon zest (and starting with 3 tablespoons of the agave nectar), in a high-powered blender .Puree for a minute or so at medium-high speed until completely smooth and no texture of the cashews remains. Taste, and add the remaining tablespoon of agave, if needed, to sweeten, and puree again.

2-layer protein pudding

Layer 1: Chia pudding with raspberries

Ingredients

  • 2 tablespoons of chia seeds
  • 1 ½ cup of almond milk
  • 1 cup of quark
  • ½. cup of raspberries.

Directions

Mix together chia seeds and milk the night before, or one-two hours before you eat it. Mix the quark and berries with the chia pudding when the mixture has gotten a jelly like consistency. Done!

Layer 2: Casein Pudding

Ingredients

  • Milk
  • Casein protein powder with chocolate flavour

Directions

Mix together casein powder with an optional amount of milk into a loose paste. Place batter in a glass and let it stand in the refrigerator until it has gotten a pudding consistency. It is best if it can be refrigerated over the night.  The next morning put the chia mix on top of the casein pudding.  Enjoy!

Overcome your 'fear' of being healthy and never deprive yourself

Over the past six months, I have come to learn that there is a kind of “fear” of living a healthy lifestyle in the sense that people may feel deprived or that they will only be eating small green salads all day. I believe that this misconception scares people away from living a healthy lifestyle because they think that being healthy—whether it’s a ‘clean’ diet, vegetarian, vegan, raw, paleo, gluten free…etc— is extremely restrictive. The image of a healthy lifestyle is portrayed as an unsatisfying one in which people are always in the gym and barely eating to maintain a slim, toned, or muscular figure. This misconception deters people from ‘committing’ to a relationship with nourishing food. The key to succeeding on a plant-based diet is to eat enough food! Calorie restricting is proven to slow down your metabolism as a protective mechanism. Investing in your health now prevents you from dealing with illnesses and aches that supposedly “come with age,” when in fact, they come from a poor diet in the early stages of your life.

Here is some perspective on what a plant-based diet can do for you and your health:

PREVENTS/CURES/REVERSES: Heart disease, cancer, emphysema, stroke, Alzheimer’s disease, kidney failure, influenza, blood infection, liver disease, hypertension, parkinson’s, pneumonitis, injuries

COUNTLESS studies have proven that through a plant-based diet, these diseases can be cured, prevented, and even reversed through a healthier lifestyle. So, with all of this knowledge, how could you neglect what your body truly wants and needs to thrive for a long, healthy life? My number one tip is to eat enough calories from high carb, whole food, plant based sources so you:

  • have high energy and feel satisfied
  • avoid cravings for unhealthy junk/processed foods
  • avoid binge eating
  • are able to focus clearly
  • improve hormonal and bodily functions
  • and be the best version of you!!!

Deprivation is not adopting a healthy lifestyle filled with vibrant, nutritious foods—deprivation is being on a standard ‘diet’ that makes you feel guilty for indulging in what you are craving!

Wouldn’t you rather have an abundance of food that makes you feel great over a spoonful of ice cream that just leaves you wanting more? Through this lifestyle, you can feel truly confident in what is going into your body! This is the first lifestyle that I have come across that is simply about long-term health and not short-term solutions. You can heal your mind and your body by nourishing yourself properly by adopting a plant-based lifestyle!

It’s just too good to be true. We can’t take our eyes off of this smoothie. If you’re ever in a rut and craving for novel pathways in the realm of vegetable preparation, you’re in luck. This apple, carrot, lemon, and beet combo will do the trick. Add a bit of ginger to add a real kick (the Bruce Lee equivalent of amping up your smoothie), and add some milk of your choice if you need to tone it down a bit.

  • 4 apples
  •  2 carrots
  • 1/2 juice and a bit of the zest of 1 lemon
  • 1 beet

Finally putting the fruit controversy to rest, I am going to tell you why fruit is so beneficial for you and your body and why fruit does not make you fat!! After doing some research, I found a general consensus that people who eat more fruit on a daily basis have lower BMIs. Think about it this way—if you swap your regular morning muffin for an apple every day, you would save about 135,000 calories in one year alone! Isn’t that amazing?! Making small swaps like this will absolutely help you achieve your long-term goals. I am not saying to change your entire diet overnight—taking baby steps towards a healthier lifestyle will help you keep it up forever! It is all about quality and quantity on a raw vegan diet—fruit calories are packed with water, fiber, antioxidants, vitamins, and minerals. This means NO restriction!

Just to put things into perspective for you:

I included the image above to give you a visual understanding of why you never feel full after eating a donut that is high in calories– those calories are not nutrient dense! The calories in processed foods do not give your body what it needs to thrive and properly function throughout the day, therefore sending your brain messages that you need more—now it is up to you to give your body what it truly needs. The endless nutritious components of fruits and veggies allow you to consume as much as you desire while constantly feeding your cells with what they need to survive.

Fruits and veggies do not only benefit the inside of your body, but they also help you to flush out toxins, radiate from within, and give you the energy that you need to get through your busy day. The antioxidants in fruits, for example, even out skin pigmentation and improve circulation giving you that desired “natural glow.” Fruits and veggies also fight off free radicals that could lead to diseases such as skin and lung cancer. I could truly go on and on about the benefits of this lifestyle but for now just remember to start making small changes that could eventually overhaul your life and your health inside-out.

From juice bars to soul cycle to gluten free diets, this year has catapulted health trends to a whole new level—FINALLY—trends that are actually pushing everybody in the right direction!

Before you drop everything and pick up your green monster juice, be careful of a few things…if anything or anyone is telling you that you are going to drop 50 pounds in one month or clear up your acne in 5 days—be sure to be a little skeptical of these outrageous claims.

A healthy lifestyle is a long term commitment! Quick fixes are exactly what they sound like—short term results with short term life spans. Along with some of these highly advertised health trends comes heavy price tags that are just not reasonable for most people looking to transform their bodies and adopt a healthier lifestyle. I promise, you do not need to buy a $12 juice every day to look and feel your best! A 5-day cleanse may make you drop 5-10 pounds quickly, but you will undoubtedly gain the weight (and your sanity) back once you start eating solid foods again.

Of course, buying that acai bowl once in a while can be considered a healthy ‘treat,’ but always be aware of what is going on top of the acai—chocolate, granola, and excessive nuts can turn your healthy treat into a poor choice when you’re trying to stay on track

Here is my best advice: limit toppings to fresh fruits and nuts/seeds for the optimal superfood snack!

As for expensive workout classes and gym memberships, I guarantee that you can get the same results with the endless workout videos available for free on YouTube at home if you just set aside the same amount of time you would have if you went to a class (and you’ll save gas!—better for you and the environment).

If you want to cleanse your body, all you have to do is eat a mainly plant based diet— that is the foolproof way to allow your body to rid itself of toxins and additionally shed some pounds! I am by no means saying that you have to completely abandon your way of life now—simply put, the more fruits and veggies you eat, the happier you and your body will be!

**This plan is best for people who want to fully embrace the Raw in College lifestyle!!!—this means you are ready to cut out animal products and processed foods—it applies to anyone who is looking to completely change their life in all aspects—enhance your overall health, lose weight, and feel your best through a whole food, plant based diet. This plan is meant to provide guidelines not rules for your eating habits. The options for this lifestyle are truly endless, so this is just a general idea of what your day could look like! YOU ARE ABOUT TO CHANGE YOUR LIFE!**

WATER: Every day, you should be drinking at least half of your body weight in ounces! For example, if you are a 140 pound woman, you should be drinking 70 ounces of water throughout the day. Water flushes your body of toxins and other harmful substances that have been accumulating in your body up until this point. When you wake up, you should start your day with one liter (32 ounces) of water—for some people, this may be a big change! Water does nothave to be boring! You can infuse your water with fresh fruits and herbs to really enhance your hydration and make it tastier for you— most importantly!

BREAKFAST OPTIONS:

**my secret ratio to a perfect smoothie every time: 1/3 of the blender should be frozen fruit, 1/3 fresh, ripe fruit, and 1/3 greens (such as kale, spinach, romaine)—if you like a thick smoothie, add water as you go to achieve your desired consistency—if you like more of a liquid consistency, fill your blender 1/3 of the way and it should be perfect!**

  • FRUIT PLATTER- This option can consist of a variety of fresh fruit of your choice! I also love eating mono meals– this is when you just have a large quantity of one fruit, such as an entire personal watermelon or honeydew. Eating mono meals helps your digestive system immensely and you will definitely notice a difference!
  • 32 oz FRESH PRESSED JUICE- It’s all about what YOU enjoy on this lifestyle! What are you in the mood for? The variations of juice recipes are endless! Juice is an incredible way to get nutrients into your body quickly and give you the energy you need to jump start your day!
  • ‘NICE’CREAM: MY FAVORITE! It’s so yummy you won’t believe how healthy it is for you! Simply blend frozen fruit in a high speed blender or food processor until the desired ice cream consistency! As a base, I like to blend about 2-4 frozen bananas in my food processor and top it off with fresh strawberries, blueberries, and dried mulberries for an extra crunch! 

LUNCH OPTIONS:

  • RAW SALAD (kale, spinach, romaine, spring mix, arugula, collard greens, etc) filled with unlimited raw veggies!! (carrots, broccoli, cauliflower, spinach, green beans, kale, asparagus, corn, beans, celery, cucumber, eggplant, greens of any kind, mushrooms, onions, pea pods, peppers, squash, sugar snap peas)
  • I like to ‘dress’ my salad with the juice of about 1/2 of a lemon, but if you are transitioning from a diet heavy in creamy dressings, you may want to try out some of my raw salad dressing recipes coming soon on my RECIPES page!

WITH

  • 2 to 4 pieces/cups of fruit (grapes, berries, apple, peach) and unlimited veggies from your always list down below!

OR

  • fruit/veggie smoothie

DINNER OPTIONS: (very similar to lunch and can be interchangeable)

  • Start your meal with a smoothie, fruit platter, or ‘nice’ cream! (this will help eliminate cravings for processed sugars after your meal, especially if you are used to having dessert after your dinner!)
  • RAW SALAD (kale, spinach, romaine, spring mix, arugula, collard greens, etc) filled with unlimited raw veggies!! (carrots, broccoli, cauliflower, spinach, green beans, kale, asparagus, corn, beans, celery, cucumber, eggplant, greens of any kind, mushrooms, onions, pea pods, peppers, squash, sugar snap peas, avocado)

SNACK OPTIONS:

  • fresh fruit
  • small handful of naturally dried fruit (no added sugar, no preservatives)
  • handful of whole natural raw nuts (walnuts, almonds, pecans, cashews, etc)

How your mindset and your environment influence your health

Maintaining a healthy lifestyle is very simple in theory but very difficult in practice for most people.You have to change your environment to match your goal—you have to make your environment work for you instead of against you. When you remove the unhealthy options from your environment, the wholesome, nutritious foods in your home become both Plan A and Plan B. The beauty of this solution is that it almost completely takes will power out of the equation— if the bad choices are not there you won’t eat them!! When you remove the barriers to your success, the road to success becomes a much smoother ride. To be successful, you have to minimize the difficult decisions being made. You have to identify your personal “trigger” foods and make a promise to yourself to not keep them in your house anymore. This is not to say that you will never have these foods again—of course you can! This strategy is for that moment in time when you crave those trigger foods and the decision is already made for you—the food is not in your environment so you will most likely not eat it!

Healthy eating should be the default, not the exception.

You should never feel hungry or deprived…this lifestyle is based off of pure abundance. If you give your body what it needs, it will heal itself—from headaches to chronic illness. One thing that truly blows me away is how much our food supply has changed over time. Our food supply has changed more in the past 50 years than it has in the past 10,000 years. As a result of our food supply, we are dealing with health issues that we never had to face before. The youth of today are suffering from celiac, auto immune diseases, other food sensitivities, digestive disturbances, and emotional issues that used to be a rarity amongst children. Food should be looked at as a way of life, not a habitual thing we consume throughout the day—that is the perspective that takes away the term ‘diet’ and creates the term ‘lifestyle.’ I completely understand that food is not just for our bodies— it’s for our mind and our emotions as well—it’s sitting around the table with our friends and family for hours enjoying each other’s company’s and the food we have come to love together. I believe that awareness is the first step towards changing anything. If you have the mindset to change your environment and the environment to fuel your success, you will never fail on your journey to becoming your best self.
